A not so classical Tomir, split in two
This year, for the first time ever, Tomir isn't Tomir. It's TO and it's MIR. Two wines, standing on their own two feet. Here we have the TO part; 100% Sauvignon Blanc.
The reason for the split was very simple: the Sauvignon Blanc we made this year was so amazing we couldn't bring ourselves to blend it away. We ran two different fermentations, and one of them turned out to be simply incredible. So good that mixing it with anything else, even with its old dance partner Viognier, felt like a crime.
Same wine making as always: harvesting very early in the morning while it's still cool, chilling the fruit overnight, hand-sorting, destemming, pressing, cold-settling, fermentation. Nothing new there. But this specific fermentation, this specific yeast, was just incredible. So here, for the first time; 100% Sauvignon Blanc, standing alone.
How does TO 2025 taste?
Extremely pure and vibrant on the nose, packed with white and green fruits. Lime peel, white apple, green apple, Japanese pear. There's even a touch of futuro melon and grass. After a bit of time in the glass, some green strawberries appear, along with a beautiful note of green mango.
On the palate it's super refined. Fresh, vibrant and quite long, but without any of the aggressive acidity you might expect. There's plenty of acidity here, but it's ripe and round. The same white and green fruit carries through, with white peach and green mango leading the way alongside those lovely apple-y notes.
This is so fresh, so pure and so delicate somehow. It's just a very happy wine!
How to best enjoy To 2025...
This wine is the perfect partner on a summer day, all on its own. You simply cannot not smile when you drink this.
But it would also be amazing alongside a fennel salad with shaved parmesan, or even with scallops; I am thinking seared scallops with a citrus beurre-blanc and sauteed fennel.
