A Galatzó of a different pedigree
Galatzó is one of our core wines, and although on paper it looks like not much has changed this year, this is a wine of a different pedigree.
Just like last year, we have 85% Chardonnay and 15% Giró Ros. The Chardonnay this year comes from two different fermentations, and the Giró Ros is, as always, partly from barrels; a rotation of barrels and tanks, what we call our solera.
How does Galatzó 2025 taste?
It has a hauntingly beautiful nose. So enticing; white peach, fresh strawberries, an almost candy-like fruit, like caramelized peach or something in that direction. Behind it you find a really fresh backdrop of mandarin and fragrant citrus fruits.
And after a bit of time in the glass, and with some air, this particularly beautiful almond note from the Giró Ros comes up; spicy, nutmeggy. It's just really, really beautiful this year.
How to best enjoy Galatzó 2025...
I could drink a whole bottle of this wine without any food whatsoever. It's simply just so beautiful and so complex.
But it also makes me think of an amazing crudo; either tuna, seabass or hamachi, with great olive oil and lime juice. I might even add a dash of lightly whipped mayo with lime peel to bring in some creaminess to support the wine. Finish with some raw chopped pistachios on top, and serve with plenty of freshly baked bread to dip into the olive oil. Heaven!
