A bit of an experiment...

This wine is a bit of an experiment; it's the very first time we make it. It's the result of a second fermentation. You see, we made two different batches of Sauvignon Blanc this year. One was so good it was bottled all on its own as TO, which is usually one part of Tomir. And here we have the other part.

It was so different, and honestly we didn't really know what to do with it. Until we got the brilliant idea of blending it with Chardonnay; one out of the three different fermentations of Chardonnay we did this year.

So here it is; for the first time ever, a 50/50 blend of Sauvignon Blanc and Chardonnay from us.

How does SB-CH 2025 taste?

The pure and energetic nose is very much marked by the Sauvignon Blanc, with lime peel, green apple, a touch of melon and some really nice ripe citrus notes.

On the palate you feel the Chardonnay more, with some body and some richness, but still backed up by that amazing acidity from the Sauvignon Blanc. It's very pure, it's very juicy, and at the same time it's quite round and complex.

How to best enjoy SB-CH 2025...

This is the ultimate all-round white wine. You can drink it on its own without a problem; a whole bottle too, if you're in the mood for it. But it's also super versatile when it comes to food.

Here I would go for anything you would usually pair with a white wine; from simple tapas-y things to seafood dishes to salads. And it's a great wine for vegetarian dishes too.
