An ultra classical Tomir
In 2024 we wanted to really try to nail the essence of Tomir! A wine that seamlessly combines the vibrant greener fruit and freshness from Sauvignon Blanc with the rounder more opulent tropical notes from the Viognier. Tomir has to be a "happy" wine; a wine you can enjoy anywhere and anytime. Uncomplicated and yet not simple by any means...
It sounds easier than it is. One one hand we have mother Nature to manage when it comes to aromatic profile, acidity and potential alcohol, and on the other hand we have SO many options in the cellar in terms of pressing and fermentations. And finally; the blending of course.
So this year we decided to keep things simple in the cellar and focus on our work in the vineyard to see if we could reach perfect balance out there for both varieties and thus, in the celler, need to do no more than just preserve and protect this.
2024 was not the easiest vintage due to heat and lack of water, but we managed! And thus, there was little fiddling around with Tomir this year inside the winery. Hand-sorting, destemming, pressing, cold-settling, fermentation (this year only one fermentation for each variety due to lower volumes - due to drought/heat), blending and voilá! Viognier and Sauvignon in a perfectly balanced 50/50% pas de deux.
How does Tomir 2024 taste?
Spring in a glass! Perfumed, charming and “happy”. The nose is packed with white peach, crispy red apple, mandarine and even fresh strawberries. So juicy and fruity! After a short while in the glass the wine opens up with some super charming floral notes like apple and almond blossom.
One the palate it’s equally charming and juicy. The purest white fruit is really in the driving seat here with tons of peach and even fresh honeydew melon. But there is more to this than “just” fruit. The wine opens up with a serious core and structure with the slightly higher alcohol adding in backbone, but the ripe acidity ensures it is kept in perfect balance. This wine is really kind of surprising with it’s at first kind of naive fruitiness and then it’s structure and volume. A superb Tomir with a multitude of purposes this year!
How to best enjoy Tomir 2024...
This wine calls for being opened on a sunny day in the garden, surrounded by happy friends & family and good music. Run a track radio on Pharrel William’s “Happy” and just kick back and enjoy life.
When you get to bottle number 2 (or 3!) and the acidity and maybe also some dancing has made you hungry opt for a nice summer salad with prawns and either strawberries or peaches, try grilling them! Add a good mozzarella and make a vinaigrette of olive oil, honey, oranges juice and zest, sprinkle with roasted macadamia nuts and you’re ready to go.
