Today we used our new Machinery for the first time processing our Pinot Noir grapes we harvested yesterday.

After collection the boxes with grapes in the cooling room the the grapes reach the sorting table to remove vine leaves and any cluster or grapes imperfections, such as sunburn, rot, uneven ripening, raisins etc. As we hand pick all our grapes most of our cluster and grapes are in very good conditions but is it still an important part to get top quality of wine.

Hereafter the grapes are elevated to the destemmer removing the stems and getting ready to be softly crushed before pumped to the steel tanks.
