2021 Galatzó 1027m 265° (Batch #3)
Galatzó with a touch of added magic in 2021! -our incredible and super versatile "food-wine" that works magic in big glasses!
We harvested our Chardonnay on August 11th and 12th and processed a total of 4695 kilos that ended at 2300 liters that was set to ferment. (As we press very lightly on the whites, we always loose around 35-50% of the total amount harvested during processing)
On August 16th and 17th we brought in a total of 6563 kilos of Giro Ros, that after processing resulted in 4250 liters of beautifully textured and structured juice that was set to ferment.
After the fermentation we decided to blend all the 2300 liters of Chardonnay with 2900 liters of Giro Ros and then added some charm and spice in shape of 1150 liters of Viognier and a dash of Sauvignon Blanc for freshness and nerve!
The remaining Giro Ros went into two 500 liters oak barrels as experiment plus a tiny 250 liters tank for topping up.
How to best enjoy 2021 Galatzó

Highly elegant and pure nose! Refined and complex showing both yellow peach, ripe granny smith apple, lime, melon and a charming floral note like honeysuckle.
With a bit of air it opens up with notes of wild strawberries even! Marvelous!
Also seamless and elegant on the palate with a tight knitted texture and the same complexity as the nose. Impeccably balanced and long, with a perfectly integrated acidity and very harmonious long finish .
A superbly mastered Galatzó with increased complexity added in from the small additions off Sauvignon Blanc and Viognier this year.
What to serve with Galatzó
First thought was razor clams, sear in a pan for 2 minutes till they open, with fresh olive oil, a bit of parsley and garlic and a dash of this very same wine and lemon juice. However; if one should feel like something slightly more elaborate I would make an oven roasted sea-bass in coconut milk, ginger, chili, lime and coriander. Naughty but marvellous pairing!

Galatzó is one of those wines you can enjoy anywhere and with everything! It will discretely make any occasion, food or company shine brighter and bring out the very best in everything and everyone. Serve Galatzó in a proper large glass to let it breathe and see how it unfolds it's beauty with a bit of air.
