It's now finally a bit quieter here at the estate. As you are well aware, the 2025 harvest is over, the wines have finished fermenting and now just need to rest and ripen, and get ready to get blended.

Cover crops in the vineyards

After each harvest, we carry out analyses of our soils to get a status of the condition of the soil, and based on these analyses, we plant cover crops. There are several reasons for this. One is to work with the structure of the soil, as the roots of the selected plants can both loosen, aerate and provide better drainage in the soil. Another, and for us even more important function, is that they can bind nutrients over the winter while our vines are dormant. For example, here in winter we planted beans in every second row, as they absorb and thus "bind" vital nutrients, especially nitrogen. In the spring, when our vines begin to wake up, we mow and mill the bean plants and mix them with the soil using a harrow, thus releasing the nitrogen (and other good stuff) they have absorbed during the winter, so that our vines can take advantage of these and start the growing season strong.

Other plants commonly used as cover crops are various grasses and legumes, but especially also rapeseed, mustard, radish and buckwheat.

The next big task in the winery is to get our 2024 red wines ready for bottling, and at the same time the new 2025 red wines ready to enter the oak barrels. As you know, we use our barrels 3 times (3 years). So, this year we are parting with our 2022 casks, and within a short time we will receive 53 new casks divided between 4 different suppliers from Bordeaux and Burgundy.

Outside in the fields we are getting ready for the winter pruning. Fortunately, the temperatures down here have dropped somewhat – especially at night – and that is good for our dear vines. Before long, they will go into a very deserved "winter hibernation" to gather strength for a new season that starts up before we know it.

And it is precisely while they are "sleeping" that we must get them pruned, as they have collected all their juice and strength down in the roots during this period and thus do not "bleed" when we prune their shoots. We will be busy for the next 2-3 months, as there is a total of approx. 1,000,000 shoots that are pruned manually with scissors. We are trimming off all the branches they have produced over the last growing season (2025) and making new shoots ready to bear the branches that will carry our 2026 harvest. We also remove all the branches from the field, as we do not want to risk them "carrying" diseases on to next year. So all branches are collected and burned.

I am often asked when the next wine packages will be ready. As you know, both 2025 wine packages have been released, and for those of you who have not yet ordered, it is about to be the last call if you want to maintain the membership. If you haven't ordered, you can do so here: ORDER

We can never answer this question exactly, as it always depends on when the wines are ready. But we expect our 2026 wine packages to be released around Easter 2026 – maybe the red wine package a little later, so a little patience yet.
