Merry Christmas and Happy New Year

And so, it's Christmas again... In the northern parts of Europe, it used to be the snow that heralded the arrival of Christmas. In Mallorca and not least in beautiful Palma, it is the brilliant fairy lights that tell us that Christmas is coming.

Those of you who spend Christmas in the north, will again this year have to "settle" for brilliant fairy lights like in Mallorca, but they are also so beautiful in this dark time – snow as in the "old days" is becoming increasingly rare.

Yes, nothing is like in the "old days", not even in the wine world. Major changes are taking place with both consumption and trade patterns, and the climate is also changing. This places great demands on us to be "adaptable".

However, we at Binivista see this as a completely natural thing and one of the "rules of the game" in this world.

Nature has always been its own and self-willed. You can see this either as a challenge or as a condition. We choose to see it as a condition that creates the opportunity to make something completely unique.

You must understand and work closely with nature. In addition to great professional knowledge, it requires a presence in the vineyards. Literally, this means that in addition to knowing our soil conditions (which are actually very diverse just within our approx. 30 ha), we also need to know the nature of our different grape varieties, the effect of sun and rain, risk and prevention of diseases, biodynamic influences (cosmic forces) ... Yes, in fact, everything between heaven and earth!

And literally, we need to know each of our approximately 100,000 plants, and each plant must be treated with love and according to its individual needs.

It sounds wildly time-consuming and it certainly is, but this is a condition for growing some of "the world's best grapes". And less can't do it when you have the ambition to make some of the "world's best wines".

I would therefore like to use this Christmas and New Year's greeting again to thank my fantastic team, who go to work every day with the ambition of making a difference in the vineyards. Although the harvest is usually thought of as the most important event, it is actually the 10 months leading up to the harvest, that make the most significant difference. As you know, we prune our vines here in the winter and we are already well underway. Nor does this happen by "chance", so no, we don't just start at one end and continue until we have reached the other... Depending on the grape variety, the health of the plants, the optimal harvest time, and the biodynamic lunar calendar, the plants to be pruned on that day are selected; A big and very important puzzle.

And of course, a big thank you also goes to the winemaker team – the grapes are the foundation and building blocks, but the "work" and the magic are created inside the wine cellar. Huge thanks to Julia, Lorena, Bibi and Marie. You are the best and a real "Dream-Team" – and really know how to make "my wines". I love our wines and am mega proud of what we have created in such a short time!
