The harvest is done
Last Saturday we thew our annual harvest party and we were super happy to welcome so many happy and festive members, who helped celebrate that the harvest is now all done. In addition to great food and wine, party and music, we presented our new Premium membership, which has already been well received, and we look forward to sharing our more unique wines with you.
The harvest started this year on July 30th and after 5 weeks of harvesting – all hand-harvested at night – we reached approx. 150,000 kg. of premium grapes. After manual hand sorting, they have been gently processed and are now in tanks and with a few exceptions fully fermented and ready to mature further in either steel tanks or oak barrels. Although it is a repeat from previous years, we think that our dear vines have performed fantastically this year, helped by the fact that they have now become another year older, and a good winter with rain and a mild summer with not too high temperatures. So, we are really happy and can't wait to work with the wines in the cellar.
Guest wine maker!
As you know, we have a Winemakers program, where we invite talented winemakers from other places in the world down to the estate and give them the opportunity to make a wine with us. In 2023, it was our Danish/American friend Peter Work and after 1.5 years in special oak barrels selected by Peter, the wines are now bottled and will be presented in Denmark in December.

The past few years we have had a dialogue with 2 other friends of the house. This time it's our Danish/Spanish friends from the mainland; David and Jonas Tofterup, where Jonas is probably the most well-known, as he is Denmark's first Master Of Wine, which is the most prestigious title you can achieve in the wine world. You will soon hear a lot more about this collaboration, but the start-up has been really good. Both David and Jonas have spent several days at the estate both before and during harvest, and have been part of the ongoing vinification. The wine is now fully fermented and soon ready to mature in oak barrels.

Next year's Artist - presentation of PoppyKalas
Over the summer, we have also been busy with one of our other regular projects. Namely, to prepare next year's Art Wine and of course our 2025 artist, who again this year will present a full exhibition in the winery on Good Friday 2026. After having featured some of the artists that Søren through Galerie Wolfsen has collaborated with for decades (Peter Skovgaard, Kirsa Andreassen and Tina Helleshøj, our 2026 artist is a relatively new artist for Søren.
The choice fell on the fantastically talented female artist PoppyKalas, which in many ways fits perfectly into our BiniVista Universe. With her unique feminine intuition and feeling for nature and its energy, we are also very much looking forward to working with her. We are already mega-happy with the main artwork, which was presented at the harvest festival. A painting that is inspired by her stay at the estate during the harvest. The painting encapsulates everything we are and stand for, the cycle of nature, symbiosis, energy and beauty. The picture is so far called – "everything is connected".
